  • 4 to 5 lbs beef chuck roast
  • 1 tbsp kosher salt
  • 1 tbsp vegetable oil
  • 1 sweet onion
  • 6 garlic cloves
  • 1 tbsp fresh ginger
  • 2 tbsp gochujang
  • ¼ cup brown sugar
  • ½ cup soy sauce
  • 2 cups beef broth

Instructions

  1. Season the beef chuck roast with kosher salt. Heat vegetable oil in a Dutch oven and sear the beef on all sides until browned.
  2. Remove the beef and sauté sliced onion, minced garlic, and grated ginger in the same pot until fragrant.
  3. Mix gochujang, brown sugar, soy sauce, and beef broth in a bowl; pour over the aromatics.
  4. Return the seared beef to the pot, bring to a simmer, cover, and cook on low for 6-8 hours until tender.
  5. Shred some beef if desired and serve hot over rice, garnished with fresh cilantro and accompanied by kimchi.
