  • 1 1/4 cups sweetened shredded coconut
  • 3 tablespoons coconut cream
  • 2 ounces cream cheese (softened)
  • 1 cup confectioners' sugar (sifted)
  • 1/2 cup shredded coconut
  • 1/2 cup unsalted butter (softened)
  • 3 cups confectioners' sugar (divided)
  • 2 tablespoons lime zest
  • 1 tablespoon freshly squeezed lime juice
  • 1/4 cup coconut flakes (toasted)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, baking powder, and salt; set aside.
  3. Cream together sugar and butter until light and fluffy. Add egg yolks and vanilla; mix well.
  4. Incorporate coconut milk and shredded coconut into the wet mixture.
  5. Gradually add dry ingredients until just combined.
