  • 1 kg lamb or mutton (bone-in)
  • ¾ cup full-fat yogurt
  • 1.5 tsp salt
  • 1 tsp turmeric powder
  • 1 inch ginger (grated)
  • 45 cloves garlic (minced)
  • 4 tbsp mustard oil
  • 3 red onions (sliced)
  • 1 tsp cumin powder
  • 2 tsp garam masala
  • 2 tsp Kashmiri red chili powder
  • 1.5 tsp fennel powder
  • 1 tsp coriander powder
  • 3 tbsp tomato paste
  • ½ cup water

Instructions

  1. Rinse and pat dry the lamb or mutton pieces.
  2. Marinate the meat in yogurt, salt, turmeric, ginger, and garlic for at least one hour or overnight.
  3. Heat mustard oil in a heavy-bottomed pot over medium heat; sauté sliced onions until golden brown.
  4. Add marinated meat to the pot and mix well; sprinkle in the spices and stir until combined.
  5. Incorporate tomato paste and half a cup of water; cover and cook on medium-low heat for about 30 minutes.
  6. Check for residue at the bottom of the pot, scrape it off if necessary; continue cooking for another 45–50 minutes until tender.
