  • 400 g ground beef or a mix of beef & pork
  • 1 egg
  • 1/2 cup breadcrumbs
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp fresh parsley, chopped
  • 1 tsp paprika
  • 1 tsp dried oregano
  • Salt & pepper
  • 1 tbsp olive oil for frying
  • 1 cup basmati rice
  • 2 cups water
  • Pinch of salt
  • 1 zucchini, sliced
  • 1 red bell pepper, chopped
  • 1 cup butternut squash, diced
  • 1 tbsp olive oil
  • 1 tsp dried thyme

Instructions

  1. Cook the rice: Rinse basmati rice under cold water. In a saucepan, combine rinsed rice with water and salt. Bring to a boil, then cover and simmer on low for about 15-20 minutes until fluffy.
  2. Prepare the meatball mixture: In a large bowl, mix ground beef (or beef & pork), egg, breadcrumbs, onion, garlic, parsley, paprika, oregano, salt, and pepper until just combined.
  3. Shape and fry meatballs: Form into small balls. Heat olive oil in a frying pan over medium heat and brown meatballs for about 8-10 minutes until cooked through.
  4. Roast vegetables: Preheat oven to 400°F (200°C). Toss zucchini, bell pepper, and butternut squash with olive oil, thyme, salt, and pepper on a baking sheet. Roast for 20-25 minutes until tender.
  5. Serve: Plate rice topped with meatballs and roasted veggies. Garnish with fresh parsley if desired.
