  • 56 pieces boneless chicken breast or 68 pieces boneless chicken thighs
  • 1/3 cup soy sauce
  • 1/4 cup + 2 tbsp brown sugar
  • 2 garlic cloves, minced
  • 1 tbsp fresh ginger, minced
  • 67 wooden skewers (soaked in water)

Instructions

  1. Soak wooden skewers in water for 10–20 minutes.
  2. In a bowl, mix soy sauce, water, red wine or mirin, brown sugar, and vinegar until sugar dissolves.
  3. Trim and cut the chicken into 1–2 inch chunks. Marinate with minced garlic, ginger, ground pepper, and some of the sauce for at least 10 minutes.
  4. Cook remaining sauce in a saucepan until thickened with cornstarch slurry.
  5. Thread marinated chicken onto skewers and grill over medium-high heat for about 8–12 minutes, basting with thickened sauce.
