  • 2 yellow peaches, pitted and sliced
  • ½ cup peach preserves
  • 2 pounds boneless, skinless chicken thighs
  • 1 medium jalapeno pepper, thinly sliced
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon soy sauce
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic, minced
  • ½ teaspoon kosher salt
  • ⅛ teaspoon black pepper
  • ⅛ teaspoon red pepper flakes
  • 1 teaspoon kosher salt

  • ½ teaspoon chili powder
  • 2 tablespoons extra virgin olive oil

Instructions

  1. In a mixing bowl, combine peach preserves, olive oil, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, kosher salt, black pepper, and red pepper flakes. Mix well.
  2. Season the chicken thighs with salt, pepper, and chili powder. Pour half of the marinade over them and let marinate for at least 10 minutes.
  3. Heat olive oil in a skillet over medium-high heat and cook marinated chicken for about 5-7 minutes on each side until golden brown.
  4. Add sliced peaches and jalapenos to the skillet along with the remaining marinade. Cook for an additional 3-5 minutes until peaches soften.
