  • ¼ cup cornstarch
  • ⅓ cup soy sauce
  • ⅓ cup light brown sugar
  • 2 large jalapeno peppers, sliced
  • ½ yellow onion, diced
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon sesame oil
  • 2 teaspoons minced garlic
  • Sesame seeds for garnish

Instructions

  1. In a large bowl, mix the chicken with cornstarch, salt, and pepper until evenly coated.
  2. Combine soy sauce, water, brown sugar, sesame oil, and garlic in another bowl; mix well.
  3. Heat olive oil in a nonstick skillet over medium-high heat. Add the chicken in batches and cook until browned (about 2–3 minutes per side). Remove from skillet.
  4. Sauté onions and jalapenos in the same skillet for about 4–6 minutes until softened.
  5. Return chicken to the skillet and pour in the sauce; stir well to combine. Cook for an additional 2–3 minutes until heated through.
  6. Serve garnished with sesame seeds.
