  • 6 to 8 cups chicken or vegetable stock
  • 1 cup uncooked orzo pasta (8 ounces)
  • 1 (14-ounce) can fire-roasted diced tomatoes
  • 1½ tablespoons Italian seasoning
  • Salt and pepper to taste
  • ½ teaspoon crushed red pepper flakes
  • 6 cloves minced garlic

Instructions

  1. Heat olive oil in a large stockpot over medium-high heat.
  2. Sauté diced onion, carrots, and celery for about 5–7 minutes until softened.
  3. Add minced garlic and crushed red pepper flakes; cook for an additional 2 minutes.
  4. Pour in chicken or vegetable stock, add fire-roasted diced tomatoes and Italian seasoning; bring to a gentle simmer.
  5. Stir in uncooked orzo pasta; cover and simmer until al dente, stirring occasionally.
