Instructions

  1. Wash and dry the lemons thoroughly. Zest the lemons using a zester, then juice them into a bowl, discarding any seeds.
  2. In a pot, combine the lemon juice, lemon zest, sugar, and water. Stir until the sugar completely dissolves.
  3. Bring the mixture to a boil over medium heat. Reduce heat and let it simmer for 30-40 minutes, stirring occasionally until thickened.
  4. To check for doneness, place a small amount on a cold plate; if it gels upon cooling, it's ready.
  5. Remove from heat and pour the hot jam into sterilized jars while warm. Seal tightly and let cool completely at room temperature.
