  • 12 mozzarella balls
  • 12 cheese tortellini
  • 24 cherry tomatoes
  • 12 fresh basil leaves
  • 12 green olives, pitted
  • 12 black olives, pitted
  • 12 slices salami

Instructions

  1. Cook the cheese tortellini according to package directions. Rinse under cold water and set aside.
  2. In a mason jar, combine olive oil, white wine vinegar, lemon juice, parsley, oregano, garlic, Dijon mustard, salt, black pepper, and red pepper flakes. Shake well.
  3. In a mixing bowl, add mozzarella balls, cooked tortellini, and cherry tomatoes. Pour the marinade over the ingredients and let sit in the refrigerator for at least 2 hours (preferably overnight).
  4. Assemble the skewers by alternating mozzarella balls, basil leaves, tortellini, olives, salami slices, and cherry tomatoes until all ingredients are used.
