  • 1 cup coconut milk (canned)
  • 1 can (14 oz) sweetened condensed milk
  • 1 can (12 oz) evaporated milk
  • 1 cup toasted coconut flakes

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a loaf pan.
  2. Cream butter and sugar in a large bowl until light and fluffy. Add eggs one at a time, mixing well.
  3. In another bowl, whisk together flour and baking powder. Gradually add this mixture to the creamed mixture, alternating with coconut milk until just combined.
  4. Pour batter into the prepared loaf pan and bake for 50-60 minutes or until a toothpick inserted comes out clean.
  5. While the cake bakes, mix sweetened condensed milk, evaporated milk, and remaining coconut milk in a bowl.
  6. After baking, let the cake cool slightly before poking holes all over it and pouring the prepared milk mixture over it. Soak for at least one hour or overnight for optimal flavor.
  7. Garnish with toasted coconut flakes before serving.
