  • 2 large fresh lemons, juiced and zested
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1/2 cup unsalted butter, melted

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a bowl, whisk together lemon juice, lemon zest, sugar, eggs, and melted butter until smooth.
  3. Roll out the puff pastry sheets on a floured surface into rectangles (approximately 12×16 inches) and cut into desired shapes.
  4. Place a spoonful of the lemon filling in the center of each pastry shape. Fold or seal the edges as preferred.
  5. Brush each pastry with an egg wash (beaten egg) for a golden finish.
  6. Bake for 15-20 minutes until puffed and golden brown.
  7. Allow to cool slightly before serving and dust with powdered sugar if desired.
