  • 1/2 cup granulated sugar
  • 2 1/4 tsp active dry yeast
  • 1 cup whole milk (warm)
  • 1/4 cup unsalted butter (melted)
  • 3 egg yolks
  • 1 tsp vanilla extract
  • Powdered sugar (for dusting)
  • Oil (for frying)

Instructions

  1. Combine warm milk, yeast, and a teaspoon of sugar in a mixing bowl. Allow it to froth for about 5–10 minutes.
  2. In another bowl, whisk together flour, sugar, and salt. Add melted butter and egg yolks to the yeast mixture, then combine both mixtures until smooth.
  3. Knead the dough on a floured surface for about 10 minutes until elastic. Place in a greased bowl, cover with plastic wrap, and let rise in a warm spot until doubled in size (about 1 hour).
  4. Meanwhile, prepare the custard by whisking egg yolks with sugar in a saucepan. Gradually add milk over medium heat until thickened; stir in vanilla extract.
  5. Once risen, punch down the dough and roll it out. Cut into circles and place custard on half before topping with another circle.
  6. Heat oil to 350°F (175°C) and fry each bombolone until golden brown on both sides (1–2 minutes). Drain on paper towels and dust with powdered sugar.
