  • 1 cup almond flour
  • 1 cup Medjool dates (pitted)
  • 1/4 cup coconut oil (melted)
  • 1 cup dark chocolate chips (minimum 70% cocoa)

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. In a bowl, mix almond flour and melted coconut oil until well combined. Press into the bottom of the prepared dish.
  3. Blend Medjool dates in a food processor until smooth; add water if needed for consistency. Spread over the almond base.
  4. Melt dark chocolate chips with remaining coconut oil in short intervals in the microwave, stirring until smooth. Pour over the date layer.
  5. Refrigerate for at least one hour until set. Cut into bars and enjoy!
