  • 1 cup long-grain rice (jasmine or basmati recommended)
  • 2 cups vegetable broth
  • 1 cup diced bell peppers
  • 1 cup diced tomatoes
  • 1 cup diced cucumbers
  • 1 tsp dried oregano
  • ½ cup crumbled feta cheese
  • 1 tbsp olive oil

Instructions

  1. Rinse the rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan, combine rinsed rice and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes until the liquid is absorbed.
  3. While the rice cooks, heat olive oil in a skillet over medium heat. Add diced bell peppers and sauté until tender, about 5 minutes.
  4. Once the rice is cooked, fluff it with a fork and mix in sautéed vegetables, chopped tomatoes, dried oregano, and crumbled feta cheese.
  5. Serve hot in bowls, drizzled with additional olive oil if desired.
