Ingredients

Scale
  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1 cup high-quality apple butter
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg until well combined.
  3. In another bowl, whisk together flour, baking powder, cinnamon, and salt. Gradually add this dry mixture to the wet ingredients until just combined.
  4. Gently fold in the apple butter; be careful not to overmix.
  5. Using a cookie scoop or tablespoon, drop rounded portions onto prepared sheets about two inches apart. Bake for 12-15 minutes or until edges are golden.
  6. Cool on baking sheets for five minutes before transferring to wire racks. Once cool, spread additional apple butter between two cookies to create sandwiches.
