  • 6 slices turkey bacon
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups green cabbage, thinly sliced
  • 4 medium Yukon Gold or russet potatoes, peeled and diced
  • 4 cups chicken or vegetable broth
  • 1 cup milk (or your choice of dairy alternative)
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil or butter (optional)
  • Fresh parsley, chopped for garnish

Instructions

  1. In a large pot over medium heat, cook the chopped turkey bacon until crispy. Remove with a slotted spoon and set aside.
  2. In the same pot, sauté diced onion and minced garlic for 3–5 minutes until softened.
  3. Add sliced cabbage and diced potatoes; stir to combine.
  4. Pour in broth and milk, then add dried thyme and bay leaf. Bring to a boil.
  5. Reduce heat to low and simmer for about 40 minutes until potatoes are tender.
  6. Remove bay leaf, season with salt and pepper, and stir in olive oil or butter if desired before serving.
