  • 2 lb lean ground beef
  • 1 lb ground pork
  • 1 carrot
  • 1 parsnip
  • 1 small onion
  • 2 cloves garlic
  • ¼ cup fresh parsley
  • 2 large eggs
  • ⅔ cup finely crushed crackers (gluten-free option available)
  • ¼ cup potato starch
  • Salt and pepper

Instructions

  1. Finely chop the carrot, parsnip, onion, and garlic.
  2. In a mixing bowl, combine ground beef, ground pork, chopped vegetables, garlic, parsley, eggs, crushed crackers, potato starch, salt, and pepper. Mix until well combined.
  3. Roll the mixture into one-inch meatballs and place them on a baking sheet.
  4. Heat vegetable oil in a pot over medium heat and sear meatballs until browned on all sides (about 5-7 minutes). Transfer back to the baking sheet.
  5. In the same pot, pour in beef broth and bring to a simmer. Add meatballs back into the pot and simmer for about 30 minutes.
