  • 1 cup Irish whiskey (e.g., Jameson)
  • 1 cup heavy cream
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh thyme leaves
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Season chicken breasts with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Cook chicken for 6–7 minutes on each side until golden brown and cooked through. Remove from skillet and keep warm.
  3. In the same skillet, sauté chopped onion over medium heat for 3–4 minutes until translucent; add minced garlic and cook for an additional minute.
  4. Pour in whiskey and scrape up browned bits; simmer for about 5 minutes. Stir in chicken broth and simmer for another 5 minutes.
  5. Reduce heat to low, add heavy cream while stirring continuously, then incorporate Dijon mustard and thyme. Simmer until thickened.
  6. Return chicken to skillet, spoon sauce over it, and simmer for another 2–3 minutes.
  7. Finish by stirring in butter until melted.
