  • 2 lbs boneless, skinless chicken thighs or breasts
  • 1 cup pineapple juice
  • ½ cup soy sauce
  • ½ cup brown sugar
  • ¼ cup ketchup
  • ¼ cup rice vinegar
  • 4 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 1 tsp sesame oil
  • Cooked white rice (for serving)
  • Chopped green onion (for garnish)

Instructions

  1. In a mixing bowl, whisk together pineapple juice, soy sauce, brown sugar, ketchup, rice vinegar, garlic, ginger, sesame oil, and black pepper to create the marinade.
  2. Place the chicken in a resealable plastic bag or shallow dish and pour half of the marinade over it. Seal and refrigerate for at least 1 hour (overnight for best results). Reserve the remaining marinade for basting.
  3. Preheat your grill to medium-high heat. Remove chicken from the marinade and discard the used marinade.
  4. Grill the chicken for about 6–7 minutes on each side while basting with the reserved marinade until it reaches an internal temperature of 165°F (75°C).
  5. Let the chicken rest for 3–5 minutes before slicing. Serve over rice and garnish with chopped green onion.
