  • 1 package phyllo dough
  • 1 1/2 cups shelled pistachios, finely chopped
  • 1/2 cup unsalted butter, melted
  • 1/2 cup honey
  • 1 teaspoon ground cinnamon
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1/2 cup honey (for syrup)
  • 1/4 cup water
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract (for syrup)
  • Additional chopped pistachios (for garnish)
  • Honey drizzle (for garnish)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9-inch springform pan.
  2. Mix chopped pistachios with ground cinnamon in a bowl.
  3. Layer phyllo dough in the pan, brushing each layer with melted butter. Use half of the sheets.
  4. Sprinkle half of the pistachio mixture on top and repeat layering with remaining phyllo sheets and pistachios.
  5. Cut into squares and bake for 25-30 minutes until golden brown.
  6. For the cheesecake layer, beat cream cheese and sugar until smooth, adding eggs one at a time and then vanilla extract and sour cream.
  7. Pour cheesecake batter over the cooled baklava layer and smooth the top.
  8. Bake for 45-50 minutes until edges are set but center is jiggly.
  9. Prepare honey syrup by simmering honey, water, lemon juice, and vanilla extract for about 5 minutes.
  10. Drizzle honey syrup over cooled cheesecake and garnish with chopped pistachios.
  11. Chill for at least 4 hours or overnight before serving.
