  • 2 lb. boneless pork shoulder/butt
  • 1/2 cup soy sauce
  • 1/3 cup honey
  • 4 garlic cloves, minced
  • 4 tbsp fresh ginger, grated
  • 10 taco shells
  • Homemade pineapple salsa

Instructions

  1. Spray the slow cooker with nonstick spray.
  2. In a bowl, whisk together soy sauce, honey, minced garlic, grated ginger, and cornstarch.
  3. Pour the sauce over the pork in the slow cooker. Cook on LOW for 6 hours.
  4. Shred the pork with two forks and let it cook for an additional 30 minutes.
  5. While the pork cooks, prepare the pineapple salsa by combining diced pineapple with chopped red onion, cilantro, lime juice, salt, and pepper to taste.
  6. Heat taco shells according to package instructions. Fill each shell with shredded pork and top with pineapple salsa.
