  • 13/4 cups Biscoff cookie crumbs
  • 6 tablespoons unsalted butter (melted)
  • ¼ cup lightly packed light brown sugar
  • Pinch kosher salt
  • 16 ounces carrots (peeled and sliced)
  • ½ cup pure clover honey
  • ¼ cup granulated sugar
  • 2 tablespoons water
  • 1 teaspoon vanilla extract
  • ½ teaspoon coarse kosher salt
  • 3 large eggs
  • ½ cup heavy cream

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix Biscoff crumbs, melted butter, brown sugar, and a pinch of salt until damp sand consistency is achieved. Press into a 9" pie plate.
  3. Steam or boil carrots until fork-tender (20–30 minutes). Blend with honey, sugar, water, vanilla, and salt until smooth.
  4. In another bowl, whisk eggs and cream together. Stir in carrot puree.
  5. Pour filling into prepared crust and bake for 45–55 minutes until set.
  6. Cool at room temperature before refrigerating for at least 4 hours before serving.
