  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 2 cups all-purpose flour (250 grams)
  • 1/2 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 cups quick oats
  • 3/4 cup unsalted butter (168 grams) (softened)
  • 2 ounces cream cheese (57 grams) (make sure to use full-fat, brick style)
  • 34 cups powdered sugar (330440 grams)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 tablespoon cream (if needed)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a mixing bowl, combine softened butter, brown sugar, granulated sugar, molasses, and vanilla until creamy. Add eggs one at a time.
  3. Whisk together flour, cinnamon, baking soda, and salt in another bowl. Gradually add to the wet mixture; stir in quick oats.
  4. Drop rounded tablespoons onto prepared baking sheets and bake for 10 minutes or until edges are golden. Cool on wire racks.
  5. For the filling, beat softened butter and cream cheese until smooth. Gradually mix in powdered sugar and vanilla; adjust consistency with cream if needed.
  6. Once cookies are cool, spread filling on half of them and sandwich with the remaining cookies.
