  • 5 cups filtered water
  • 34 tablespoons Assam black tea
  • 23 cinnamon sticks
  • 23 star anise
  • 12 whole cloves
  • 8 green cardamom pods
  • 1 tablespoon black peppercorns
  • 1/4 teaspoon ground nutmeg
  • 1/3 cup chopped ginger root
  • 1/4 cup granulated sugar
  • 2 tablespoons dark brown sugar
  • 1 tablespoon honey (optional)
  • 1 tablespoon maple syrup (optional)

Instructions

  1. Crush the whole spices using a mortar and pestle.
  2. Toast the crushed spices in a saucepan over low heat for 2–3 minutes.
  3. Add filtered water, ginger, and nutmeg to the saucepan and bring to a boil.
  4. Reduce heat and simmer for 5–10 minutes.
  5. Stir in loose Assam black tea and steep for 3–5 minutes.
  6. Strain the mixture into a bowl or pitcher.
  7. While warm, add desired sweeteners and stir in vanilla extract.
  8. Cool before transferring to a glass bottle for storage.
