  • 5 slices bacon (chopped)
  • 2 tablespoons butter
  • 1 tablespoon fresh basil (roughly chopped)
  • 1 tablespoon fresh thyme (roughly chopped)
  • 1 tablespoon fresh oregano (roughly chopped)
  • 1 tablespoon fresh rosemary (roughly chopped)
  • 5 cloves garlic (minced)
  • 2 cups sliced carrots
  • 1 medium sweet yellow onion (diced)
  • 3 tablespoons tomato paste
  • 1 tablespoon flour
  • 4 cups chicken broth
  • 1 can (28 oz) peeled, whole tomatoes
  • 1 tablespoon red wine vinegar
  • 8 oz BelGioioso Burrata

Instructions

  1. In a large pot over medium heat, cook the bacon until crispy, about 10 minutes. Add butter until melted.
  2. Stir in fresh herbs and garlic; cook for another 2–3 minutes until fragrant.
  3. Add sliced carrots and diced onion, cooking until softened (about 10 minutes). Mix in the tomato paste for an additional 2–3 minutes.
  4. Stir in flour, then add chicken broth and whole tomatoes. Smash tomatoes gently. Add red wine vinegar, bring to a boil, then reduce heat to simmer for 30–45 minutes.
  5. Blend in batches until smooth. Serve hot with a dollop of BelGioioso Burrata.
