  • 2 tablespoons olive oil
  • 1 large yellow onion (finely chopped)
  • 2 stalks celery (chopped)
  • 2 medium Granny Smith apples (peeled and diced)
  • 2 medium cloves garlic (minced)
  • 4 cups low-sodium vegetable broth
  • 2 cups uncooked wild rice blend
  • 1 cup uncooked quinoa
  • 1 ½ cups dried cranberries
  • 1 cup raw pecans (chopped)
  • Fresh herbs: parsley and sage

Instructions

  1. In a large pot over medium heat, add olive oil. Once hot, sauté onions and celery until soft.
  2. Stir in apples, garlic, thyme, and salt; cook for one minute.
  3. Add white wine and vegetable broth; bring to a boil.
  4. Stir in wild rice blend; reduce heat to low and simmer covered for about 35 minutes.
  5. Add quinoa; cover again and cook for an additional 15 minutes.
  6. Mix in cranberries, pecans, parsley, and sage; adjust seasoning if needed.
  7. Preheat oven to 350°F (175°C), grease a casserole dish with olive oil, transfer the mixture lightly into the dish without mashing it down.
  8. Bake for 25–30 minutes until golden brown on top.
