  • 2 salmon fillets (150g each)
  • 400g baby potatoes
  • 300g fresh asparagus
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 garlic clove, minced
  • 1 tbsp chopped fresh parsley
  • 1 tsp Dijon mustard
  • Salt & black pepper, to taste
  • Juice of lemon
  • 1 tsp dried herbs (rosemary or thyme)
  • 50g shredded mozzarella cheese
  • Fresh parsley, chopped for garnish

Instructions

  1. Preheat the oven to 200°C (390°F).
  2. Toss halved baby potatoes in olive oil, salt, pepper, and dried herbs; roast on a baking tray for 25–30 minutes.
  3. On another tray, drizzle trimmed asparagus with olive oil; season and roast for about 12–15 minutes. In the last 5 minutes, add cheese.
  4. In a skillet, heat olive oil and butter; add garlic, Dijon mustard, parsley, and lemon juice to make the glaze. Season salmon and sear for about 3–4 minutes on each side.
  5. Serve salmon alongside roasted potatoes and asparagus.
