  • 1 medium white onion, chopped
  • 1 can mild green chiles (or sub 2 seeded and diced jalapeños)
  • 1 tablespoon ground cumin
  • 2 teaspoons chili powder
  • ¼ teaspoon coriander
  • ¼ teaspoon dried oregano
  • 4 cups low sodium chicken broth
  • 2 (15 ounce) cans chickpeas, rinsed and drained
  • ¾ teaspoon salt, plus more to taste
  • Freshly ground black pepper
  • 1 ½ pounds boneless skinless chicken thighs (or chicken breast)
  • ½ cup frozen corn
  • 1 medium lime, juiced
  • ⅓ cup fresh, chopped cilantro

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sauté chopped onion and green chiles until softened.
  2. Stir in spices, then add chicken broth and one can of drained chickpeas. Add chicken and season with salt and pepper; simmer for 20–30 minutes.
  3. Remove and shred the chicken, returning it to the pot along with lime juice and cilantro.
  4. Blend the remaining chickpeas with water until smooth; stir into the chili along with frozen corn.
  5. Simmer for an additional 5–10 minutes before serving hot.
