  • 2 chicken breasts (cubed)
  • 1 cup cooked jasmine or basmati rice
  • 3 tbsp soy sauce
  • 2 tbsp honey (or maple syrup)
  • 1 garlic clove (minced)
  • 1 cup broccoli florets (steamed)
  • 1 avocado (cubed)
  • 1 cucumber (sliced)
  • Salt & pepper to taste
  • Olive or vegetable oil

Instructions

  1. In a small bowl, mix soy sauce, honey, rice vinegar, garlic, and water to create the teriyaki sauce.
  2. Season chicken cubes with salt and pepper. Heat oil in a skillet over medium-high heat and cook chicken for 5-6 minutes until browned.
  3. Add teriyaki sauce to the skillet and simmer. Stir in cornstarch slurry to thicken the sauce.
  4. Steam broccoli florets for about 2-3 minutes until bright green.
  5. Assemble bowls by placing cooked rice at the base, then topping with glazed chicken, steamed broccoli, sliced cucumber, and cubed avocado.
  6. Garnish with sliced green onion before serving warm.
