  • 1 tbsp olive oil
  • ½ cup diced onion
  • 2 cloves garlic (minced)
  • ½ cup plain Greek yogurt
  • 1½ cups shredded sharp cheddar cheese (divided)

  • ¼ tsp black pepper

Instructions

  1. Preheat oven to 400°F (205°C). Halve the spaghetti squash lengthwise and scoop out seeds.
  2. Brush cut sides with olive oil, place face-down on a baking sheet, and roast for 35–40 minutes until tender.
  3. In a skillet over medium heat, sauté diced onion in olive oil for about 5 minutes; add minced garlic for an additional minute.
  4. Once cooled, shred the roasted squash into strands using a fork.
  5. In a mixing bowl, combine shredded squash, sautéed onions and garlic, Greek yogurt, 1 cup cheddar cheese, salt, and pepper.
  6. Transfer mixture to a greased casserole dish and top with remaining cheese.
  7. Bake at 375°F for 20–25 minutes until bubbly and golden.
