  • 1 lb. lean ground beef (or turkey/chicken)
  • 8 oz. dry farfalle pasta
  • 1 can (14.5 oz.) diced tomatoes
  • 1 can (8 oz.) tomato sauce
  • 2 cups low sodium chicken broth or water
  • 2/3 cup fat-free cottage cheese
  • 1 cup part-skim mozzarella cheese

Instructions

  1. Sauté minced garlic in olive oil over medium-high heat until fragrant.
  2. Add lean ground beef, season with salt, pepper, oregano, and onion flakes; cook until browned.
  3. Stir in diced tomatoes, tomato sauce, broth or water, and pasta; mix well.
  4. Bring to a boil, then cover and simmer for 14-15 minutes until pasta is tender.
  5. Remove from heat and stir in cottage cheese; top with mozzarella cheese.
  6. Cover for 1-2 minutes or until cheese melts; serve warm.
