  • 1.52 lbs Boneless Skinless Chicken Breasts
  • 1 Large Yellow Onion
  • 23 Large Bell Peppers
  • 46 Cloves Garlic
  • 8 oz Cremini or White Button Mushrooms (optional)
  • ½ cup Low-Sodium Chicken Broth
  • 8 slices Provolone Cheese or 1.5 cups Shredded Mozzarella
  • Whole Wheat Hoagie Rolls

Instructions

  1. Slice the onion, bell peppers, and mushrooms; mince the garlic.
  2. Sauté vegetables in a skillet for 5-7 minutes; add garlic for another minute.
  3. Transfer sautéed veggies to the slow cooker. Layer raw veggies if not sautéing.
  4. Place chicken on top; pour broth and Worcestershire sauce over chicken.
  5. Sprinkle seasonings evenly.
  6. Cook on LOW for 4-6 hours or HIGH for 2-3 hours until cooked through.
  7. Shred chicken with forks; mix back into the crockpot with veggies.
  8. Stir in half the cheese until melted, if desired.
  9. Toast hoagie rolls and serve warm with remaining cheese on top.
