  • 1 lb large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 tablespoon brown sugar
  • 1 tablespoon rice vinegar
  • 1 tablespoon pineapple juice
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper, to taste
  • 1/2 cup fresh pineapple, chopped
  • 2 tablespoons fresh cilantro, chopped
  • 1 tablespoon sesame oil
  • 1 tablespoon lime juice

Instructions

  1. In a bowl, combine soy sauce, honey, brown sugar, rice vinegar, pineapple juice, red pepper flakes (if using), salt, and black pepper; mix until smooth.
  2. Heat olive oil in a large skillet over medium-high heat. Add shrimp and cook for about 2-3 minutes on each side until pink. Remove from skillet.
  3. Sauté minced garlic and grated ginger in the same skillet for about 30 seconds until fragrant.
  4. Pour in the sauce mixture and simmer for 1-2 minutes to thicken slightly.
  5. Add shrimp back into the skillet; toss to coat evenly with the sauce. Simmer another minute.
  6. Stir in chopped pineapple and cook for an additional minute until softened.
  7. Drizzle with sesame oil; toss again.
  8. Remove from heat; stir in lime juice and cilantro before serving.
