  • 1 3/4 lb boneless, skinless chicken breast
  • 3 cups fresh pineapple
  • 1 1/2 large green peppers
  • 1 large red onion
  • 1/3 cup ketchup
  • 1/3 cup packed dark brown sugar
  • 1/3 cup low-sodium soy sauce
  • 1/4 cup canned pineapple juice
  • 4 Tbsp olive oil (divided, plus more for brushing grill)
  • 1 1/2 Tbsp rice vinegar
  • 4 garlic cloves (minced)
  • 1 Tbsp minced ginger
  • 1/2 tsp sesame oil
  • Salt and freshly ground black pepper

Instructions

  1. Prepare the marinade by whisking together ketchup, brown sugar, soy sauce, pineapple juice, olive oil, rice vinegar, garlic, ginger, and sesame oil in a mixing bowl.
  2. Marinate the chicken in a gallon-size resealable bag with half of the marinade for at least one hour (or overnight for better flavor).
  3. Preheat grill to medium heat (around 400°F). Toss vegetables and pineapple in olive oil and season with salt and pepper.
  4. Thread marinated chicken and vegetables onto skewers.
  5. Grill for about 5 minutes per side while brushing with reserved marinade until chicken reaches an internal temperature of 165°F.
