  • 500 g guavas (for compote)
  • 80 g granulated sugar (for compote)
  • 1 tbsp lime juice (for compote)
  • 300 g Tennis biscuits (for crust)
  • 150 g unsalted butter (melted for crust)
  • 700 g cream cheese (for filling)
  • 250 g castor sugar (for filling)
  • 4 extra large eggs (for filling)
  • 1 tsp vanilla extract (for filling)
  • 200 ml whipping cream (for filling)
  • 200 g guavas (for decorating)

Instructions

  1. Prepare the guava compote: Cook chopped guavas with sugar and lime juice in a saucepan until thickened. Set aside to cool.
  2. Make the crust: Preheat oven to 180°C (350°F). Crush Tennis biscuits and mix with melted butter. Press into the bottom of a springform pan.
  3. Prepare cheesecake filling: Beat cream cheese with castor sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla and whipping cream.
  4. Assemble and bake: Pour the filling over the crust and smooth the top. Bake for about 50 minutes or until set in the center.
  5. Cool and serve: Let cool at room temperature before refrigerating for at least 4 hours. Top with guava compote and fresh guavas before serving.
