  • 1 pound ground turkey
  • 4 medium potatoes
  • 1 tablespoon olive oil
  • 1 medium onion
  • 2 cloves garlic
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup chicken broth
  • 1/4 cup chopped fresh parsley

Instructions

  1. Prepare ingredients by peeling and dicing the potatoes into small cubes, and finely chopping the onion and garlic.
  2. In a large skillet, heat olive oil over medium heat. Add diced potatoes and cook for about 8–10 minutes until softened.
  3. Remove potatoes and sauté onion and garlic in the same skillet until translucent (about 3–4 minutes).
  4. Add ground turkey, breaking it up while cooking for about 6–8 minutes until no longer pink.
  5. Stir in thyme, paprika, salt, and pepper, mixing well.
  6. Return potatoes to the skillet, add chicken broth, and stir to combine.
  7. Cover and simmer on low for about 5 minutes to meld flavors.
  8. Stir in fresh parsley before serving hot.
