  • 1 lb. lean ground beef
  • 1 medium onion (diced)
  • 2 cloves garlic (minced)
  • 3 carrots (sliced)
  • 2 stalks celery (sliced)
  • 2 medium potatoes (diced)
  • 4 cups beef broth
  • 1 can diced tomatoes (15 oz.)
  • 1 can condensed tomato soup (10.5 oz.)
  • 3 tablespoons tomato paste
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a Dutch oven over medium heat. Add ground beef, onion, and garlic; cook until beef is browned.
  2. Stir in carrots and celery; sauté for about 6-8 minutes until softened.
  3. Mix in Italian seasoning and bay leaf; cook for another minute.
  4. Add potatoes, beef broth, diced tomatoes, tomato soup, tomato paste, Worcestershire sauce, green beans, and corn. Stir well.
  5. Bring to a boil, then reduce heat and let it simmer covered for 35-40 minutes until vegetables are tender.
