  • 1 small yellow squash
  • 1 red bell pepper
  • 1/4 red onion
  • 6 white corn tortillas
  • 3 tablespoons natural peanut butter
  • 3 tablespoons warm water

  2. Slice zucchini and yellow squash lengthwise, then brush both sides with olive oil.
