  • 1 ripe avocado
  • 1 pound tomatillos
  • 1 jalapeño
  • ½ yellow onion
  • ¾ cup fresh cilantro
  • 6 corn tortillas
  • Juice of 1 orange
  • Juice of 1 large lime
  • ½ teaspoon dry oregano
  • 1 teaspoon kosher salt
  • 1 teaspoon paprika
  • ½ teaspoon freshly-cracked black pepper
  • ½ teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • 2 tablespoons avocado oil
  • ¼ cup finely chopped white onion for serving
  • 6 green onions

Instructions

  1. Prepare marinade by mixing orange juice, lime juice, paprika, salt, onion powder, black pepper, smoked paprika, cumin, oregano, and cilantro in a bowl.
  2. Marinate skirt steak for at least 15 minutes.
  3. Blend tomatillos, yellow onion, garlic, jalapeño, water, cilantro, lime juice, oregano, and salt until chunky to create avocado salsa.
  4. Grill marinated steak over medium-high heat for 4-5 minutes on each side until desired doneness; let rest before slicing.
  5. Warm corn tortillas on the grill; assemble tacos with sliced steak and top with avocado salsa.
