  • 2 medium zucchinis
  • 1 cup uncooked quinoa
  • 1/2 cup sour cream or Greek yogurt
  • 1 tbsp Dijon mustard
  • Olive oil
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Bring steak to room temperature, then season with olive oil, salt, pepper, garlic powder, and smoked paprika.
  2. Preheat your grill or grill pan over high heat.
  3. Toss sliced zucchini in olive oil and season lightly.
