  • juice of 1/2 lemon
  • 1 1/2 teaspoons smoked paprika (divided)
  • 2 1/4 pounds boneless skinless chicken thighs (cut into 1-inch pieces)
  • 1/4 red onion (cut into 1-inch pieces)
  • 1 red bell pepper (cut into 1-inch pieces)
  • 1 teaspoon olive oil
  • 1/2 teaspoon garlic powder
  • 1 1/2 teaspoons crushed dried rosemary
  • 1 1/2 teaspoons kosher salt (divided)
  • 1/4 teaspoon ground pepper

Instructions

  1. In a large bowl, combine Greek yogurt, lemon juice, 1 ¼ teaspoons smoked paprika, rosemary, garlic powder, and salt. Add chicken pieces; coat well. Refrigerate for at least 1 hour.
  2. Toss onion rings and bell pepper with olive oil, remaining salt, and pepper in a medium bowl.
  3. Preheat grill to medium-high heat. Soak wooden skewers if using.
  4. Thread marinated chicken and veggies onto skewers, discarding excess marinade.
  5. Grill kabobs for about 12-15 minutes, turning halfway through until chicken is cooked through.
