  • 1 pound russet potatoes (cut into 1-inch pieces)
  • 1 medium onion (cut into small chunks)
  • 6 garlic cloves (peeled & cut into thirds)
  • 1 tablespoon + 1 teaspoon olive oil
  • 1 ½ teaspoons crushed dried rosemary
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon ground pepper

Instructions

  1. Preheat your grill to medium heat.
  2. In a large mixing bowl, combine potatoes, onion, garlic, and olive oil. Toss until well-coated.
  3. Add rosemary, smoked paprika, salt, and pepper; toss again until evenly coated.
  4. Create an 'X' shape with two pieces of aluminum foil (24 inches each) and place the potato mixture in the center.
  5. Fold up the sides of the foil securely; wrap with an additional piece of foil for extra protection.
  6. Place on the grill and cook for 20 minutes on one side, then flip over and cook for an additional 15 to 20 minutes until tender.
  7. Carefully open the package to let steam escape before serving hot.
