  • 1/4 cup olive oil
  • 1 large yellow bell pepper
  • 1/2 teaspoon freshly ground black pepper (or to taste)
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt (or to taste)
  • 1/2 teaspoon freshly ground black pepper (or to taste)
  • 4 ounces Island Salsa (or as desired)
  • 1/2 cup diced mango
  • 1/3 cup pineapple tidbits
  • 2 to 4 tablespoons fresh cilantro (optional for garnishing)

Instructions

  1. Marinate the chicken: In a ziptop bag, combine chicken, salsa, lime juice, olive oil, and black pepper. Seal and shake to coat. Refrigerate for at least 30 minutes.
  2. Preheat grill: Lightly oil grates and heat to medium-high.
  3. Prepare peppers: Toss sliced bell peppers with olive oil, salt, and pepper in a grill basket.
