  • 1 block halloumi cheese (810 oz), cut into 1-inch cubes
  • 1 lemon, thinly sliced
  • 1 medium red onion, cut into chunks (optional)
  • 1 cup cherry tomatoes
  • 3 tablespoons olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • 1 tablespoon fresh thyme, finely chopped (or 1 tsp dried thyme)
  • 2 garlic cloves, minced
  • 1 teaspoon honey
  • Salt and freshly ground black pepper, to taste

Instructions

  1. In a mixing bowl, combine olive oil, lemon juice, thyme, minced garlic, honey, salt, and pepper to create the marinade.
  2. Pat the halloumi dry and toss it in the marinade. Let it sit for at least 10 minutes.
  3. Thread halloumi cubes, lemon slices, onion chunks (if using), and cherry tomatoes onto skewers.
  4. Preheat your grill to medium-high heat. Grill skewers for about 2–3 minutes per side until golden brown.
