  • 3 Tbsp raw honey (melted if solid)
  • 1/4 cup dijon mustard
  • 2 Tbsp fresh lemon juice or white vinegar
  • 1/4 cup avocado oil
  • 1/4 tsp sea salt
  • 34 boneless skinless chicken breasts (about 1 1/2 lbs)
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 Tbsp avocado oil (for the grill or pan)
  • 8 cups chopped romaine (kale or other greens)
  • 3/4 cup cherry tomatoes (halved)
  • 1/2 red onion (thinly sliced)
  • 1 medium cucumber (peeled and sliced)
  • 1 large avocado (thinly sliced)
  • 8 slices bacon (cooked until crisp, chopped or crumbled)
  • 6 hard boiled eggs (sliced)

Instructions

  1. Whisk together melted honey, dijon mustard, lemon juice or vinegar, avocado oil, and sea salt in a mixing bowl for the dressing.
  2. Season chicken breasts with salt, pepper, garlic powder, and onion powder.
  3. Grill chicken on medium-high heat for 6-7 minutes per side until fully cooked.
  4. Chop greens and veggies: romaine into bite-sized pieces; halve cherry tomatoes; slice red onion and cucumber; thinly slice avocado.
  5. Once cooled slightly, slice grilled chicken into strips.
  6. In a large bowl, layer greens first followed by toppings: tomatoes, onions, cucumbers, avocado slices, bacon crumbles, and sliced hard-boiled eggs.
  7. Drizzle honey dijon dressing over the salad and toss gently before serving.
