  • 1 peach
  • 1520 spears of fine asparagus
  • 1 courgette
  • Mixed salad leaves
  • 100 ml olive oil (for dressing and cooking)
  • Pine nuts
  • Fresh basil
  • Garlic
  • Parmesan cheese

Instructions

  1. Prepare the homemade lemon pesto by blending basil, garlic, pine nuts, olive oil, parmesan cheese, and lemon juice in a food processor until smooth. Season to taste.
  2. Preheat a griddle pan over high heat and grill halloumi slices for 2-3 minutes on each side until charred. Remove from heat.
  3. Brush asparagus with seasoned oil and grill for about 2-3 minutes until marked.
  4. Use a vegetable peeler to create strips from the courgette, coat with oil, and grill briefly until lines appear.
  5. Assemble the salad on plates with mixed greens topped with grilled halloumi, peaches, asparagus, courgette strips, pine nuts, and drizzle with lemon pesto.
