  • Kosher salt and freshly cracked black pepper
  • Vegetable or avocado oil for grilling
  • 1/4 cup parsley leaves
  • 1/4 cup fresh chives
  • 1/4 cup fresh basil leaves
  • 1/4 cup fresh dill
  • 1/4 cup distilled white vinegar
  • 1 1/2 tablespoons lemon juice or additional distilled white vinegar
  • 1/2 cup mayonnaise
  • 1 garlic clove
  • 1 1/2 teaspoons honey
  • 1/3 cup extra virgin olive oil

Instructions

  1. Prepare the Green Goddess sauce by blending fresh herbs, vinegar, lemon juice, mayonnaise, garlic, honey, and olive oil until smooth. Season with salt and pepper to taste.
  2. Marinate the chicken thighs in 1/3 cup of the green goddess sauce for 1-2 hours in the refrigerator.
  3. Preheat your grill to 400°F (200°C) and lightly oil the grates.
  4. Grill chicken thighs for 5-6 minutes on one side, then flip and cook for an additional 4-5 minutes until they reach an internal temperature of 165°F (74°C).
  5. Let rest for 5 minutes before drizzling with remaining green goddess sauce.
