  • 34 medium potatoes
  • 1 large carrot
  • 1 small onion
  • 10 sorrel leaves (or spinach + lemon juice)
  • Fresh dill
  • Ghee butter (or olive oil)
  • Filtered water
  • Better than bouillon (vegetable flavor)
  • Salt and black pepper
  • Sour cream and hard-boiled egg (for serving)

Instructions

  1. Cube the potatoes and carrots; dice the onion. Chop the sorrel or spinach and dill.
  2. In a large pot, melt ghee butter over medium heat. Sauté onions until translucent (about 3 minutes).
  3. Add cubed carrots; cook for another 3 minutes.
  4. Pour in water, add potatoes, bay leaves, and bouillon. Bring to a boil, then simmer until veggies are tender (about 20 minutes).
  5. Stir in chopped sorrel/dill; let rest for 10 minutes before serving.
  6. Ladle into bowls and top with sour cream and halved boiled eggs.
