  • 1 pound shrimp (peeled and deveined)
  • 1 tablespoon olive oil
  • 2 cloves garlic (minced)
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup quinoa (uncooked)
  • 2 cups water
  • 4 cups romaine lettuce (chopped)
  • 1 cucumber (sliced)
  • 1 cup tomatoes (diced)
  • 1/2 red onion (thinly sliced)
  • 1/2 cup kalamata olives (sliced)
  • 3/4 cup feta cheese (crumbled)
  • 1 lemon (cut into wedges)
  • 2 tablespoons fresh parsley (chopped)

Instructions

  1. Rinse quinoa under cold water. Combine quinoa and water in a pot; bring to a boil. Reduce heat, cover, and simmer for 15 minutes until water is absorbed. Fluff with a fork.
  2. Pat shrimp dry and toss with olive oil, garlic, paprika, salt, and pepper until coated.
  3. Heat skillet over medium-high heat; cook shrimp for 2-3 minutes per side until pink and lightly golden.
  4. While shrimp cooks, chop romaine lettuce, slice cucumber and tomatoes, and prepare olives and feta.
  5. Assemble bowls: start with romaine lettuce followed by cooked quinoa, then layer remaining ingredients including shrimp.
  6. Top with feta cheese and serve with lemon wedges.
